It says in the manual (http://processing.org/learning/overview/), that "When you first run Processing, the sketch last used will automatically open." This is not true on my system.

That's no longer true with 2.0a8 and later. We've replaced that behavior (it annoyed many people) by implementing a menu that has the recent sketches.
I'm marking this as a reference issue so that the learning page gets updated.
