The isolinux.cfg and related, are used in the inital boot process.
They go into the isolinux directory of the CD image

splash.pcx.gz is the background to the first thing you see when you boot up. It
should be unzipped before adding it to the CD.

isolinux.cfg
This file has all the menu options and what they do.

Note: for dapper 6.06 this file works, the version on
http://blog.technomancy.org/2007/04/09/automating-an-edubuntu-install-cd/
doesn't for some reason. The version on technomancy works for 6.10, edgy. It's
something to do with the order of the boot options
