allow us to backup a directory; we have the database being backed up, but what about local files that are outside version control, like user's mugshots. NOTE: right now, 'tar' is following symlinks. allow us to tell it NOT to back up to ebs, even if we have it enabled. ah, the upgrade_and_install_all for setup sounded like a good idea, but if setup is called multiple times it can automatically install newer versions of the gems than your application demands, and not all gems work well when a newer version is installed but you are trying to use an older one. Same goes for packages...we don't want to auto-upgrade.
