DOC: `stable` documentation is stuck at 0.15.1; no changelog afterwards

Describe the bug

• https://sparse.pydata.org/, which is an alias for https://sparse.pydata.org/en/stable/, points to the documentation of 0.15.1, with the obsolete layout
• https://sparse.pydata.org/en/0.15.5/ uses the obsolete layout
• Both https://sparse.pydata.org/en/0.15.5/changelog.html and https://sparse.pydata.org/en/latest/changelog/ stop at 0.15.1

Thanks for the issue, @crusaderky. Indeed, I've been lazy about updating the changelog when releasing, but the changes can be found here. stable indeed points to 0.15.5, so that isn't an issue.

Would you like a new release 0.15.6 with the changelog updated?

The layout changes on main were made after 0.15-maint was branched, and there's a significant effort to port them back to that branch. main is currently under flux, and isn't suitable for release.

IMHO a 0.15.6 just for this would be overkill unless it's already needed for unrelated reasons.
I think that the changelog page for 0.16.0 onwards (latest) should contain the notes for 0.15.2 ~ 0.15.5 though.
