feat(theming): Provide a way to override table density scales

Feature Description

Hoping to have a way to change the density scales for table headers and cells from px to rem. I'm currently using m2.

Use Case

I'd like to have the option to have certain tables in my app to be denser than others, but also make sure a user can still scale the font. I don't see a way to set the scale to rems
