Add Cloudera to the official server list

Server Details

Adding https://github.com/cloudera/iceberg-mcp-server to the official server list.

This is a A Model Context Protocol server that provides read-only access to Iceberg tables via Apache Impala. This server enables LLMs to inspect database schemas and execute read-only queries.

How Has This Been Tested?

Testing was done with different libraries and Claude Desktop. Details are covered in the https://github.com/cloudera/iceberg-mcp-server repository.
