I really hate that windows 11 is full of bloatware now.

but I would like to remove Windows Defender

I know about this, but it is not suficient for me.
I want to do windows update and then I want to uninstall all apps, ondrive, defender,...
And windows installer has 3 phases to run something

How can you restart in post install phase ?

windows 10 is EOS.
That is the reason why I choose win 11
I do wrote pretty much same for win 11
But in post install phase I only install openssh server. And I do all from host machine over ssh

I forget that 'Restart-Computer' is just planned restart not REAL restart :)

'Restart-Computer -Force' will restart immediately

It's really hard to solve the problem if we don't know roots of it. It's kinda XY problem, the issue is not about removing defender, not about running scripts. Don't meant to be rude, but it's better when issue is technically described: what your motivation, goals, possible solution.
So for now you are asking to add some docker configuration to this project to make changes to OOBE phase to add script to run?
