PDF footer always displays version `v 10.0.0`

Hello, I downloaded the latest (tag 16.1.0) PDF from Releases but I noticed that at the bottom of the pages it says v 10.0.0 which is a bit confusing.

I seed that this is hardcoded in the meta.tex file.

Wouldn't it be clearer to set this the same as the release tag or make it updateable by the build script or GH workflow?
