When I attempt to connect to a server, I'm confused about a few fields in the connection form:

Quick Connect IP (:version) — What exactly is this, and how should I format or use it?

Thing — What is this field for?

Proxy — Am I supposed to enter a URL here? Is this field required, or can it be left blank?

Quick Connect IP (:version) — What exactly is this, and how should I format or use it?

This is for quick connecting to their servers (as the name suggests), you enter the server ip and port or version in one of these formats:
ip
ip:port
ip:port:version
ip:version
Example: wss://play.mcraft.fun:1.19.4 - forcefully connects with version 1.19.4
And you can add :ms at the end so it uses one of your added authenticated Microsoft account.

Proxy — Am I supposed to enter a URL here? Is this field required, or can it be left blank?

If you mean which is not top of main servers menu it is required if your server doesn't have builtin proxy and you are connecting to non websocket servers
