Classic Meatloaf

Ingredients:

  • 2 lbs hamburger meat
  • 2 eggs
  • 1 can Rotel tomatoes
  • 1/2 cup water
  • 1 cup crushed pork rinds
  • Worcestershire sauce, to taste
  • Ground black pepper, to taste
  • Garlic powder, to taste

For the Topping:

  • 1/4 cup brown sugar
  • 2-3 squirts of mustard
  • 1/3 cup ketchup

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine hamburger meat, eggs, Rotel tomatoes, water, crushed pork rinds, a few dashes of Worcestershire sauce, pepper, and garlic powder. Mix well until all ingredients are evenly distributed.
  3. Line a shallow baking dish with aluminum foil.
  4. Shape the meat mixture into a loaf and place it in the prepared dish.
  5. In a small bowl, mix together brown sugar, mustard, and ketchup. Spread this mixture evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the topping is caramelized.
