The ZFS installation option is greyed out on the minimal 2016.03.20 x64 install iso currently because the ZFS kernel module is missing.

IRC/Telegram:

2016-04-07 16:59:03+0300 < danboid> I tried the latest x64 minimal installer a couple of days ago to try the ZFS install option but it was greyed out. Why?
2016-04-07 17:02:58+0300 <@Mikaela> I imagine it has been temporarily disabled due to being problematic, but for answer that is not tied to my imagination ping @karasu0 (who is developer)
2016-04-07 17:09:07+0300 < danboid> Mikaela: I mailed him a couple of days ago about it but he's nor replied yet
2016-04-07 17:09:53+0300 <@Mikaela> @karasu0 you should probably do that ^^
2016-04-07 17:09:53+0300 < danboid> Mikaela: Do you know of any specific probs people have had with ZFS?
2016-04-07 17:10:00+0300 <@Mikaela> (he is at Telegram)
2016-04-07 17:10:28+0300 <@Mikaela> I have faint idea of it being something related to kernel modules and booting

This is intentional. The minimal iso is designed to have the smallest possible file size so it doesn't include everything that is included on the regular ISO. Only the regular ISO includes ZFS.

That's a shame. MATE is my main desktop so I would otherwise want to use the minimal installer as I have no need for GNOME 3.

The ZFS packages are only a few extra MB and it is/will be a killer feature so I'd like to see this re-evaluated one day, maybe when ZFS is better supported and tested under Antergos.

The regular ISO includes a GNOME live environment, yes, but you can still choose to install whichever desktop you please.
