diy docs: corrections and consistency improvements to diy docs

Add image for M5Stack FIRE
Add mention of OEM T-Display model with case
Add alt text to hardware images
Use OEM product names
Match image width of FIRE to Core Basic
Update URL for the Core Basic hardware
