jist -e should jump you into something like ${VISUAL:-${EDITOR:-vim}} before it gists.

Maybe mention that vim can do :cq so you can abort the gist if you want. I'm not sure how other editors signal an abend, but I kind of don't care. ☺

Think this option should be a $HOME/.jistrc config option rather than a default. Most would probably rather just have it fire off, rather than pop open an editor each time, especially off the hop.

Why add another place to configure what the convention of $VISUAL → $EDITOR → picksomething does?

This is the best idea. I'm not sure I want it, but -e could be pretty handy (it's also another way of letting you implement pipes without jist having to do it).
