I researched the steps to publish apps to Google Play & the App Store and wrote the following document. Deployment is fairly simple on both platforms (a little easier for iOS since Apple handles the deployment keys for you with teams).
The biggest hurdle will be paying the 25 USD one-time registration fee for Google Play and 99 USD annual fee for the Apple Developer Program (both required for each respective storefront).
We'll also need to share the keystore with the upload key through some secure channel if we want more than one person to publish for Android.
