I've tried brew unlink libgcrypt && brew link libgcrypt to no avail.

Sorry, I missed that on the troubleshooting page, my bad. It does work yes, and I just found the documentation to understand why. Is this still considered a bug for the superenv case? Maybe just a formula documentation issue?

Thanks for the report. The build can't find gcrypt_config a program that lives in /usr/local/bin

The formula most likely needs a depends_on 'libgcrypt' because that used to be brought in by gnutls, but is not anymore. There is PR open to fix this, #16093. The reason this worked with env=std is because it still has /usr/local/bin in the PATH which let gcrypt_config be found.
