Is it possible to use this for server-side rendering? As far as I can tell it seems like there's no way to transform the code/styles that is rendered on the server.

The plugin itself is not responsible for server-side rendering. It is styled-components that can make this for you. Please refer to the documentation how you can do this: https://www.styled-components.com/docs/advanced#server-side-rendering
If you are, on a contrary, is interested how to inject component names (what plugin mostly does) to the server-side rendered output, just make sure you use the same transformed code as you would use on the client side. In this case you'd get the same output.
