feat: refine simulator controls and daemon/service behavior

Summary

• Move simulator selection into its own toolbar trigger and tighten its hover/layout treatment
• Wire Cmd+K to the simulator software keyboard toggle instead of a guest key combo
• Add explicit screen recording start/stop controls and make screenshot capture behave consistently
• Update daemon/service port handling so services stay on 4310 and daemons use 4311+, with simdeck reusing an active service when present
• Refresh docs, action configs, and operator guidance to match the new CLI/API behavior

Testing

• Ran client typecheck and Rust cargo check
• Built the app end-to-end with the native bridge changes
• Verified the toolbar layout and simulator picker behavior in the browser UI
• Smoke-tested the software keyboard toggle path through the running local daemon
