Document makeExtensible & makeOverridable

Issue description

As mentioned in #26668 (comment), we should ensure makeExtensible and makeOverridable are documented in the Nixpkgs user guide.

I'm assigning this to myself with the intention of adding docs in the next couple days.

I too noticed today that all functions in lib/fixed-points.nix are not documented in Nixpkgs' docs - only in the source code. Seems like something that will be easy to fix.
