Makes it explicit that .env.sample can be used for a holesky .env (but the repo defaults to holesky so if a user forgets this step they will still be able to start up on testnet, and will have to explicitly taken an action to startup on mainnet). Delete old examples we don't want to imply are supported. Add warning to readme about encouraging people to diversify their setups.
