test: add remaining tests to improve coverage

• add new tests file to raise test coverage to 98%

Details

• removes unused dateToStringWithOffset helper
• removes unused convertEnumCaseToValue helper
• updates loginWithJWT to use defaultTargetPlatform logic for easier testing
• adds test for utils
• improve test cases for the onesignal_flutter lib file
