LLM docs

agent-sdk is the core of the next version of OpenHands, V1, while OpenHands repo is mostly on V0. We have ported a lot of code from OpenHands to agent-sdk, and now the main LLM code is in agent-sdk, while OpenHands is supposed to delete its old one and become a multirepo of interfaces, app server / cli interfaces to agent-sdk. OpenHands repo will continue to let the user set stuff in web UI, for example.

Adapt the docs for this architecture: the LLM docs are in this repo still in Openhands only, so adapt that. Consider agent-sdk the main source of truth, and notice we do have an agent-sdk directory in docs.

Make a PR to docs with re-arranged and accurate LLM docs.
