I prefer the environment variable WEBBY_EDITOR over EDITOR. Here's why: I use EDITOR='mate -w' for git because that makes it wait for the file to close before returning me to the command prompt. With Webby, that's not the behavior I want. So I set WEBBY_EDITOR='mate'.
Previously, text editor spawning was scattered across several rake files -- and it was done in several different ways. This change centralizes the code to spawn an editor. This code correctly handles the case where EDITOR='mate -w' -- whereas previous code did not consistenly handle it correctly.
