Approximately 10% of Northern European ethnicity users cannot distinguish between red and green. Winston Chang's palette addresses that problem

Hi @technocrat many thanks for raising this PR & for the suggestion. At present the col argument only has any effect in inspect_cat, so I'll need to make some further changes before this will work. I've raised an issue #4 and will leave the PR open until I've made the necessary change.

The Winston Chang colorblind palette is now supported via show_plot(col_palette = 1). Thanks again for the suggestion @technocrat.
