Bump max date for Datepicker "min & max validation" example #17657

Documentation Feedback

The date used in the example is the 1st of 2020, which quickly approaches. It may be unusable after that date.

Currently the maximum date in one of the examples is January 1st 2020 which is coming up. These changes make it a bit more maintainable by setting it to December 31st one year in the future.
