I know this isn't exactly an "issue," but I'm curious about the images in this repo. If I'm not mistaken, the icons used for the emoji are also in iOS. Are these images open source or proprietary Apple art?

I am sorry, but I am not sure about the licensing of the emojis. I tried to do some research on this but didn't come up with anything certain..

Attribution is great, but the license is still unclear.

Because issues are disabled on the gemoji repo, I asked for clarification in the most recent commit on the gemoji LICENSE file - hopefully someone from github will clarify the situation.
