Update to version 2.0.0 in pom.xml and documentation

This PR updates the project version to 2.0.0 across all relevant files and improves the project's build configuration.

Changes Made

Version Updates

• pom.xml: Updated version from 1.2.3-SNAPSHOT to 2.0.0
• README.md: Updated dependency examples from 1.2.2 to 2.0.0 for both Maven and Gradle configurations

Project Improvements

• Added target/ to .gitignore: Prevents Maven build artifacts from being accidentally committed to version control
• Cleaned up repository: Removed previously committed build artifacts that should not be in version control

Usage Examples
