Olive oil potato mash


  • 1kg of potatoes
  • 25cl of milk
  • 2tablespoons of cream
  • 1 glass of very fine quality olive oil

The making

  1. crush the cooked potatoes in either a mash making tool, or by hand
  • cook them a bit longer if you want this step to be easier
  1. heat up in a pot by slowly adding the oil and stirring
  2. add boiling milk and cream
  3. Serve on the spot
  • you may add basil and/or ground olive
  • good for veal, poultry or roasted fishes
