We need to change location of the Canton docker image in docs.

Canton is a JVM application. To run it natively you need Java 11 or higher installed on your system. Alternatively Canton is available as a docker image (see Canton docker instructions).

@danielporterda This Obtaining the Docker Images section should be the reference for where to get the Docker images.

That section itself needs to change to mention that the version they are looking for needs to be substituted in.
