Due to customer requests, we are relaxing the Ruby 2.1 requirement in the Ruby SDK. A warning about Ruby 2.0 end-of-life has been added to the README. This is a backport of #658 for the 1.1 branch of the Ruby SDK.
This updates our bleeding edge, but should be backported to the `sdk-ruby-1.1.x` release branch. Closes #667

This commit relaxes the Ruby version requirement to 2.0, and ticks the SDK version to 1.1.1.
This is a backport of #658 and #670 for the 1.1-stable branch.
