Switch to pnpm as a package manager

Remove npm lockfile, generate a new pnpm-lock.yaml and pnpm-workspace.yaml.
Reinstall all modules with pnpm, removing and re-adding as required.

Refactor the following to use pnpm to execute commands:

• tree-sitter parser project targets
• release workflow and semantic release config files
• editor launch tasks
• pre-commit hooks
