It would be great if settings (like these gateway settings in particular) that are being overridden by env/config values were indicated in the control panel

Given these config files can soon be a bit complex, this would make it much easier to be sure that such config values are being set successfully & is, I think, 'the done thing' these days generally in Craft, e.g.:
