Consider targeting VC 2.0 data model because:
- Much cleaner and close to final form
- Allows use of related resources, which might be a good way to express referenced assertions
- JSON-LD in VC 2.0 doesn't require namespacing
- VC 2.0 has much stronger mechanisms for cryptographic proofs and (unlinkable) selective disclosure that we might want to adopt
- VC 2.0 adds new sections on NIST-approved cryptography
- VC 2.0 allows multiple proofs
