As noted in issue #11, the charset defaulting being used for files associated with the Handlebars plugin doesn't behave the way users expect.
We were using the system default (which for Mac users is Mac Roman), but that's not a great default in general.
This change reuses the logic used for HTML file types to determine the default charset, so things should behave better now.
