If you click on "edit as text", does it also look crazy there?

Nope - looks good:

I can reproduce by pasting in the text here, and then switching to list view.

If I remove exclude parameters it works fine again, so there must be some matching issue with multiple parameters.

If this is for a backup (i.e. not for a restore), you cannot specify the dbpath parameter, it needs to be set on the "Database ..." page.
Also, the exclude filters should be set on the page with the file sources, as the options here do not preserve order, and you cannot control the order of the extra options and the filters from the source files page.

As far as I can tell if there are more than 10 "--" parameters in the "Edit as text" mode, then returning to individual field mode results in incorrect field-to-value mappings.

So far it doesn't seem to matter what parameters are in the first 10 or after them, the mismatch still happens at 11+ parms.

I can confirm that with Chrome 64 and Duplicati 2.0.2.1_beta_2017-08-01
Works fine in Edge.
