Until evening of the 12th - we can't move in to the apartment until late. My visa stuff is morning of the 13th.
@lstoll I'd assume we would want to stay somewhere in Germany on the 7th and on the 11th evening to make the drive back on the 12th a bit easier, but up to you.

Go to the Wachau and drink all the Smaragd Riesling (Smaragd is the highest grade of Riesling, available from various vineyards). Forget about red wine.

Looks like Durnstein might be a good place to be located as it is between Krems and Melk and on the Danube.
Steirereck is worth it. A+++. If you somehow can manage it, get a dinner reservation and enjoy 4 hours of bliss.
Dürnstein is touristy but really cute. If you like castle ruins, visit Burgruine Aggstein which is not far, overlooking the Danube.

I guess accommodation is next. I'll look for somewhere to stay on the night of the 7th, maybe around Nuremberg or München. That gets us a good chunk of the journey to Salzburg out of the way. We don't need to be in Berlin until later on the 12th, so on the 11th it's worth staying somewhere we can check out, the 12th will be a lazy day.
@lstoll I guess it depends on where want to start. In Wachau and then Salzburg so driving is less on the final days or hit up Wachau after and then figure out where to stay.
