Trying to set an existing binary field from store:false to store:true should throw an error. Currently it is just silently ignored:

PUT /t
{
  "mappings": {
    "foo": {
      "properties": {
        "bar": {
          "type": "binary"
        }
      }
    }
  }
}

PUT /t/_mapping/foo
{
  "properties": {
    "bar": {
      "type": "binary",
      "store": true
    }
  }
}

GET /t/_mapping
