Theme option fields can't define settings

Describe the issue

Currently, its possible to assign simple fieldtypes as theme options (input, textarea, WYSIWYG, etc.). It's not currently possible to assign more advanced fieldtypes that need additional configuration such as selects or checkboxes, as the settings value doesn't seem to be passed through.

To reproduce

1. Create a select fieldtype theme option
2. Attempt to assign a settings key with some select options
3. Nothing renders
