Incorrect reference to `yum` instead of `dnf` in Chapter 4

This also goes for a few other references—now that RHEL 7/CentOS 7 is the oldest release I support anywhere, I can start switching defaults to dnf instead of yum. Most new things are on 8 or 9 now.
