I didn't like how the :visited links turned blue when you hover over them, so i added a:visited:hover it's own color.

Doing this by default would force people to set their own :visited:hover styles to override this one. I suspect this would be a point of confusion and something most devs are not accustomed to doing regularly. Therefore, while this is something you might want to do on your own projects, it doesn't seem suitable to be included by default. Thanks.

For some unkown reaseon, this is buggy in safari/crome and maybe others when using with jquery mobile.
a { color: #444; } is a generic setting and must be less applied than jquery mobile specific classes i.e .ui-btn-up-e { }

However html5boilerplate breaks them - any ideas?

This looks like a jQuery Mobile bug. It's going to occur in any site that sets hover and visited states on links. You might want to report the issue at that project. Thanks
