There does not currently seem to be any suitable work around with the current legend options (http://www.highcharts.com/ref/#legend) that will provide uniform spacing between variable width legend items.
Note that there does seem to be a bit more padding between legend items in iOS safari and Android 2.x browsers. But not in Firefox/Chrome/Safari desktop browsers (Windows 7).
I would go back to 2.1.6, but I need to support Android 2.x. Any suggestions?

I'm also running into this issue. It would be great to have itemMarginLeft and itemMarginRight properties to go with the existing itemMarginTop and itemMarginBottom properties.
Hi. Somewhere between version 2.1.6 and 2.2.0, the padding between horizontal legend items was reduced to pretty much zero.
Comparison of a highcharts.com demo:
2.1.6

2.2.0
