Manually test upgrades from 1.0 to 1.1

A sensible flow might be:

• Start a FireFly 1.0 stack
• Run E2E tests from 1.0
• Bring down stack and upgrade to 1.1
• Start stack and run E2E tests from 1.1

This largely worked. Identified the following:

Changes for release-1.0 branch to provide a better starting point for migrating: #982
Changes for main branch to fix bugs after migration: #984

Also opened #986, which needs further discussion.
