In Bitcoin the "stadard" tends to be either SHA2(SHA2(x)) or RIPEMD160(SHA2(x)), with SHA2 being the 256-bit SHA2. Lightning HTLCs use the RIPEMD160(SHA2(x)). All clients need to agree on some standard, yes. I suppose as first mover you get quite a lot of say in what happens...
