vim: change the formatlistpat variable to format lists properly

The previous value of this variable recognized numbered lists properly,
but it didn't format the un-ordered lists starting with `-` properly.
This commit removes the numbered list formatting (not very commonly
used) and instead adds formatting just for the un-ordered lists.

TODO:

- Recognize lists of TODO items: `- [ ] ` or `- [x] `
- Re-introduce the numbered list regex

Previous value (vim default for markdown, probably)
