PostGIS has been changing their function names (e.g. from "GeomFromText" to "ST_GeomFromText"), and I don't think Mapserver has kept up. Can you use an older version of PostGIS (<2.0)?

Or install the "legacy.sql" file from PostGIS 2.0 for old function name support. The next point release of 6.0 and the 6.2 release will use the new functions exclusively. The changes are already committed.
