As most screens are wide today, this makes more sense.

This is bigger than what Minecraft uses by default, but all screens (even netbooks') support 1024 × 600 anyway.

It would be better to check the aspect ratio and then set correct default values. It makes no sense to default to 16:9 on 4:3 screens

Yes, looking more suited to today's screens. Also, if someone starts it in fullscreen for any reason (and doesn't change the resolution), the aspect ratio will match the screen's ratio (thus not distorting the image as much).

It's not a big problem today as the huge majority of screens are 16:9, 21:9 or 16:10 (or something close).

It doesn't make any sense to use a resolution like 1024 for the window size. I have always hated window sizes like that. It is slightly too large for a screen that is 1024 wide, and still considerably smaller than the next size. So I would suggest 1000, or maybe 1250x650 or something like that. 1280x800 and 1366x768 are probably the smallest screen resolutions you can find today in a computer that can comfortably run Minetest.
