Allow running and using matron on desktop for development #732

To make the development cycle faster it would be nice if we could run matron locally and still be able to interact with it.
This would require:

Some way to output the screen/display
- This seems to be (partially) covered by #391
Some way to allow input events for the encoders and buttons
