Here is a command I use to capture Counter-Strike: Source.

glc-capture wine C:/Program\ Files/Steam/Steam.exe -console -applaunch 240

You could change the Steam Application ID "-applaunch" to which ever game you want to capture you can also add Steams Command Line Options as normal for example.

glc-capture wine C:/Program\ Files/Steam/Steam.exe -console -applaunch 240 -console -dev -dxlevel 80 -fullscreen -width 1440 height 900

List of Steam Application IDs: http://developer.valvesoftware.com/wiki/Steam_Application_IDs
List of Command Line Options: http://developer.valvesoftware.com/wiki/Command_Line_Options

Here is a small bash script I made for capturing steam games. its simple enough.

Hope that helps.
