I often add some ghost chili to mine. If you get the quantity right, you can get it so you don't feel any obvious mouth heat... but you'll wonder why your ears are going numb ;)

  • 3 avocados
  • 1 small onion, peeled, and chopped into big pieces
  • 2 cloves garlic, peeled
  • 2 Tbsp lemon juice
  • coarse black pepper to taste
  • kosher salt to taste
  1. Peel the avocados and put the flesh into a food processor, along with all the other ingredients.
  2. Process.

If you have good avocados, you shouldn't need anything else to yield a nice, fresh, bright guacamole. If you have crappy avocados, feel free to add the following to hide the taste a little

  • diced tomato
  • diced serrano or jalapeno
  • chopped cilantro
  • bacon (why not?)
