`head -1` will not work in some environments #5055

Bug description

During Ocaml build there is the following output :

echo "#define OCAML_VERSION "head -1 ../VERSION"" > version.h
head: -1' option is obsolete; use -n 1'
Try `head --help' for more information.

Build runs to completion but the resulting ocamlc -version doesn't show version number. This happens on some embedded linux platform.

Fixed by using sed instead. Hopefully, that will change less often than head.
