Expose `gitoid` API over FFI

We'd like for the `gitoid` API (to start with) to be exposed over FFI so that other language implementations can build off of the existing Rust logic rather than building anew.

I've used cbindgen in the past and am inclined to try using it again, but I'm also open to other possibilities!
